Find a car club for Z's and ask them. Most are very willing to share info with other enthusiasts.
The most desirable generation of the S30s would be the 240z (mostly the '70s one).
Just remember that the farther you go back, the harder it ill be to find a clean chassis.
I original wanted a 240z but I can across a 280z that I just couldn't past up. The frame is ultimately almost the same, except the metal bumpers (yuck!). I'm converting the bumpers on the 280z to resemble the 240z right now.
If you want to get an S30 chances are that you will have to have search long and hard for a good deal on a clean almost rust free chassis. Rust is your enemy. You can always get a motor for the car, but rust is something you want to avoid.
Check out classiczcars.com and hybridz.org for a bunch of info on the S30. You may even find your Z there
